My salads suck. He’s been trying to tell me this for years but when I began menu planning and it was on the menu more often, I started to listen. See, when I’m at the store and I “get stuff for salad” that means grabbing some lettuce. I don’t plan salads well. So my salads end up being… lettuce. Maybe something else if it occurred to me and we had it, like tomatoes. Of course he adds cheese and dressing to that but he still doesn’t like it. I never cared and would just munch down leaves. Good for me, right? But lately I have noticed a lot of awesome salads with pomegranate seeds, nuts, cucumbers, strawberries, grapes, you name it. I started to make an effort and my salads are getting better but there was one discovery that has made me feel quite confident in making salad into a meal instead of a side. I usually don’t have to tell the kids to eat the salad anymore and sometimes it’s the first thing they go for.
Crunchy warm buttery toasty homemade croutons! They are super easy and quick and yummy and are cheaper than store bought (which I now realize are hard and not so good)! The way I make them utilizes four ingredients that you’re practically guaranteed to have. See the picture? Sold yet?
Homemade Croutons
Recipe2-3 slices of bread, cubed, homemade is great, a little dry made a few days ago is great, and even heels work well. I have used store made bread though and they are good.
1/2-1 T butter
A sprinkle of oregano (Of course sprinkle is a legit cooking measurement. What are you talking about?)
A couple sprinkles of garlic salt (Or crush up your own garlic and sprinkle on some salt. Yum!)
Melt butter in a skillet over medium/medium-high heat. When melted, toss in bread cubes and turn them over a few times quickly (to get butter on more than one side) with a spatula. Sprinkle oregano and garlic salt. Cook until toasted and turn occasionally to brown other sides.
They are basically impossible to not eat out of the skillet at this point. And it’s also basically impossible to stop eating them so I urge you to have the rest of your meal ready! Hope you enjoy and give them a try.
