Initial Pancakes

My kids love this tradition that we have developed of a slow weekend day starting with sourdough pancake letters. The recipe I use for pancakes is here but I use 1 cup of milk and 1 cup of yogurt instead of the buttermilk. They are the best pancakes I’ve ever had and uses up my extra sourdough starter!

I seem to always be playing with the kids’ food, making smiley faces out of veggies on their plates or trying fun new ways to remake old foods. When I was a kid my grandma made our pancakes shaped like our first initial for us when we visited her and all of us loved them. The trick is to make the batter thin enough by adding extra milk if needed and to use a container with a pour spout. If you get crooked lines you can shape them up a little bit with the spatula. It takes some practice but nobody really minds lumpy letters and they taste good even if you mess them up. It’s also fun to make numbers, like their age. If there are any leftovers in our house they become pancake sandwiches later in the week with peanut butter and fruit inside. Yum!
